Tomato Salad with Basil Vinaigrette

These tomatoes from a market outside the walls of Diocletian's Palace in Split, Croatia are a reminder that summer is still here and if you shop farmer's markets you may still find tomatoes that taste like they're supposed to.

If not, next year consider growing them yourself. They can be raised in containers and window boxes, staked and hung from cage systems, or grown hydroponically.

This beautifully presented tomato salad from Como
Water is really all about the wonderful dressing. Leave it to Tiffany to develop a vinaigrette recipe that is sparkling with flavor. The combination of basil leaves with white balsamic vinegar, oil, lemon juice and raw agave is so simple you will make it again and again.

Tiffany's secret is the white balsamic vinegar. I actually never knew this ingredient was available, but it is a must to keep the dressing green. The flavor is milder than dark balsamic and not as sweet. Find it in your local grocery or online.
